Homemade Healthy Brownies

January 3, 2012

These are my healthy version of a brownie. They are way lower in fat.  They are not of the gooey variety, they are cakeier.

  • ½ cup applesauce
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • ½ cup flour
  • 1/3 cup unsweetened cocoa
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ½ cup walnuts chopped (optional)

–    Preheat oven to 350. Grease a 9×9 in. pan.
–    In a medium bowl, mix together the applesauce, sugar, vanilla. Beat in eggs
–    In a separate bowl, combine flour, cocoa, baking powder, and salt.
–    Gradually add flour mix into egg mixture until well blended.
–    Stir in walnuts, if desired.
–    Spread batter evenly into the prepared pan.
–    Bake 20 – 25 minutes or until brownie begins to pull away from the sides of the pan.
–    Let cook on wire rack before cutting.

This is so simple and easy. You can add chocolate chips or even swirl some peanut butter in it.
