Carrot Cake Muffins

I wanted to make muffins with my son so I found a recipe and tweaked it to make it lower in cal and fat. This is my version. They came out good and were easy to make with simple ingredients.

Carrot Cake Muffins

  • 1.5 cups plain flour   
  • 0.5 cup sugar   
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 eggs
  • 6 oz apple sauce
  • 2 tablespoons honey
  • 2 cups grated carrots


Preheat over at 350.

Mix top 6 ingredients together.

In separate bowl mix eggs, apple sauce, and honey.

Mix in dry ingredients into wet ingredients. JUST until moist.

Fold in Carrots.

Fill lined or greased muffin tin 2/3 full.

Bake for 20 – 25 minutes.

Makes 10 larger or 12 smaller muffins
