Crispy Egglpant

I found a recipe for eggplant and changed it a bit to be healthier. Here is my healthy crispy eggplant recipe.

Crispy eggplant

1 small eggplant
1/4 cup breadcrumbs (italian or plain)
1/8 cup pre-rinsed quinoa
salt and pepper
Optional – any spices you like

Directions:

Preheat oven to 400. Line a baking sheet with foil. Spray with non stick cooking spray. On a plate mix the dry ingredients together.

Wash and dry the eggplant and slice thin, slices 1/2 – 1/4 inches will work. Press each eggplant into the dry ingredients, coating both sides. Place on prepared cookie sheet.

Spray lightly with nonstick cooking spray. And bake for 30 minutes.

Tastes best warm. It is even good as a snack.

These were really good and not soggy at all. I enjoyed the extra crisp from the quinoa. Hubby liked it as well. It will become another go to veggie item.
