Easy Crockpot Chimichangas

I have found some great recipes on A Year of Slow Cooking and this is One that sounded so easy that I just had to try it. It was delicious and so simple too!


Easy Crockpot Chimichangas

  • 1 1/2 lbs meat ( I used a lean piece of beef but pork will work as well)
  • salt and pepper
  • 1/2 cup water
  • 1/2 large onion diced
  • 1 can diced  tomatoes and chiles – drained


– Place onion on bottom of onion, salt and pepper the meat on both sides and place on top of onions. Add 1/2 cup water.


– Cook for about 8 hours on low.

– After the meat is done cooking, remove it from the pot.  Remove any fat out of the liquid left in pot and remove all but 1 cup of liquid. I kept all the onions in the crock pot and saved the broth for use in recipes later.

– Return the meat and shred with fork. Add the drained can of tomatoes and chiles. Turn heat to high and allow to heat up again.

– I used my fresh tortillas and put in the meat (drain extra juice so not soggy) and fold the bottom and top in. Then wrap the sides in.

– Fry on a med-high heated pan with cooking spray or oil until golden brown.

– I enjoyed it plain but you can top with cheese, salsa, guacamole, sour cream, etc. …
