Homemade Tortillas

I stumbled across a recipe for homemade tortillas and since I wanted to make a recipe for Chimichangas I decided to try it out. It was easy and the flavor beat any store bough tortillas. They were fantastic with the Chimichangas.

Homemade Tortillas

1/2 cup water
2 cups flour ( I used unbleached white but whole wheat will work too)
1 tsp baking powder
1/2 tsp salt
2 tbsp olive oil

Mix all the ingredients in a bowl, including oil. Stir until combined, should make a firm but not sticky dough. Add more water if too dry.

Knead for about 1 minute and roll into small balls of dough. You will get 4-6 per cup of flour. Start out with smaller ones until  you get the hand of rolling them out.  When finished, put them in the fridge covered for at least 15 minutes ( overnight is best for whole wheat).

Place one ball between two sheets of waxed paper, and flatten with a rolling-pin. Try to keep the same thickness all over. I did not have the waxed paper so I just did it on a clean counter top. It is hard to get them round but the taste great anyway.

Cook each tortilla on a preheated cast iron skillet or large pan over med-high heat, turning once after about 30 seconds or after slightly browned in spots and puffs up.

Wrap in clean towel to keep warm. Enjoy!
