Crunchy Chickpea Snack

This is a favorite recipe of mine that I learned many years ago. It is delicious and easy. Once the oven in my new place gets fixed I will be making this again!

Crunchy Chickpea Snack

1 can of Chickpeas, drained and rinsed, than patted dry

1 tbsp oil ( I use canola or olive oil)

1/2 tsp coriander

1/4 ground cayenne pepper

1/4 – 1/2 tsp salt

1/4 – 1/2 tsp pepper

Directions:

All the spices are to taste  So put in a little at a time and taste it to get the flavor you like best. I love fresh pepper and lots of coriander.

Get a cookie ready. I usually line it with aluminum foil for easier clean up. Make sure chickpeas are drained and rinsed well and patted dry. Place in bowl and add all the other ingredients. Mix well so all chickpeas are coated.  

Pour onto the cookie sheet and spread in a single layer. Bake in 350 degree over for 30 minutes. Stirring half way through. They should be crunch if not bake a little longer.

Enjoy warm or cooled.
