Rice Pilaf with Tomatoes

This is a recipe that I have used often and it so easy and delicious. I try to keep the ingredients always on hand so that I can whip it up quick if I need.

Rice Pilaf with Tomatoes

1 tbsp Olive Oil

1/2 cup finely chopped onion

1 cup long grain white rice ( this time I used a spanish rice since it was all I had on hand)

1 can (14.5 oz) diced tomatoes in juice

1/4 tsp dried thyme

Course salt and ground pepper

Directions:

Heat oil in saucepan over medium heat. Add onion and rice. Cook stirring frequently until rice is golden 5-8 minutes.

Stir in tomatoes( and juice), thyme and 1 cup water. Season generously with salt and pepper.

Bring to a boil, reduce theat to medium-low and simmer tightly covered until rice is tender. About 18 minutes.

Take off heat, and let stand 5-10 minutes, fluff rice gently with fork before serving.
