Easy Lentil Soup

Since we will be moving at the end of the month I’m trying to use up all the odds and ends in the cupboard. I saw the lentils and immediately though of making soup. This is super simple and delicious hot or cold.

Easy Lentil Soup

1/2 cup dry lentils

3-4 cups water

8-10 baby carrots or one large carrot , cut up

1/2 small onion, diced

Garlic powder, about 1/4 tsp

Cumin,  about 1/4 tsp

Pepper, a dash

Bullion cube

Directions:

Add lentils and water to medium-sized pot. Bring to a boil, lower heat to a simmer and cook for 15 minutes.

Add everything else other than the bullion cube. Spices add to taste. Cook for 20 more minutes on low until everything is soft.

Add Bullion cube and cook 5 more minutes. Enjoy right away or cooled.

This is very low-calorie. The whole pot is no more than 260 calories. It’s a great gilt free meal.
