Chocolate Quinoa Breakfast

This is a variation on the previous Quinoa Breakfast. I made it plain but you can add banana for some more fruit.

Chocolate Quinoa Breakfast

Serves 2

1/2 cup quinoa

1 1/4 cup Light Chocolate Soy Milk

2 tbsp raisins

1/4 tsp ground cinnamon

Banana chopped into smaller pieces ( optional)

1. Rinse the quinoa and tip into a saucepan, than pour in the milk. Bring to a boil, reduce heat and simmer for 5 minutes.

2. Add raisins and cinnamon, simmer for 8-10 minutes, until liquid is absorbed. Add banana while warm.

3. Serve in small bowl.

My hubby liked this version better and it was sweet enough with the raisins and light chocolate soy milk. It’s good even for dessert.
