Fruity Quinoa Breakfast

I found this recipe in a Low GI cookbook and wanted to try it out. So the other morning I made this recipe for my hubby and myself.

Fruity Quinoa Breakfast

Serves 2

1/2 cup quinoa

1 cup milk

1/2 apple, chopped with skin on

3 tbsp raisins

1/4 tsp ground cinnamon

1/2 tsp honey

1. Rinse the quinoa and tip into a saucepan, than pour in the milk. Bring to a boil, reduce heat and simmer for 5 minutes. Add chopped apple, raisins and cinnamon and simmer for 5-10 minutes, until liquid is absorbed.

2. Serve in small bowl, and drizzle with honey.

Quinoa has a different texture than I am used to but it grew on us and it was a nice breakfast. It tasted good and hubby liked it too.
