Matzo Brei

I’m working on the 5 lbs of matzo that I purchased recently. I found this recipe on Matzo Outside the Box  and tweaked it.

It is similar to french toast and tastes really good. I can imagine you can make it savory or sweet.

Looks messy but tastes delicious!


(serves 1) 

1 matzo

1/4 cup water

1 eggs

Dash of salt and pepper

1/2 tablespoon butter


Break matzo into 1 inch pieces, place in small bowl.

Boil water.
Pour water over matzo and allow to soak for 2 minutes.
Drain excess water from matzo.
Beat egg in a medium-sized bowl. 
Add salt and pepper to egg mixture and pour over matzo, combine well.

Heat a medium-sized non-stick pan over medium heat.
Melt butter in pan.
Pour egg/matzo mixture into pan and spread out evenly.

Cook on one side for 3 minutes and then flip to other side for 3 minutes or until brown.
