Simple Egg Custard

We  were in a mood for something sweet and creamy so I set up a simple recipe for egg custard. Nothing too fancy here. You probably have all the ingredients on hand already.

My Simple Egg Custard

4 eggs

2 cups milk (I used fat-free.. but a higher fat will create a creamier texture) UPDATED 1 1/2 cups makes it thicker.

1 tsp vanilla

Sweetener ( I used 1/3 cup splenda granulated with fiber and 4 extra packets regular splenda)

Preheat oven to 350. Mix everything together, mix with whisk or hand-held mixer. Pour in small bowls, ramekins or keep in large bowl. Place in cake pan and place custards in then fill up cake pan half way with water, also known as a water bath.

Oh how I wish I could take a hot 45-55 minute bath….

Bake for 45-55 minutes until knife inserted in center comes out clean. Make sure it is set in the center. Let cool and enjoy.

Ours could have been a bit sweeter. Next time I might reduce the milk down a bit and maybe add chocolate.

It was a nice variation from cookies and other sweets.
