The Best Guacamole

This is the best guacamole recipe I have found so far and anyone that tries it loves the complex flavors it has. It is very simple to make.

 

The Best Guacamole

2 avocados ( I use the Hass variety)

1 small onion (I use a scallion)

2 cloves of garlic

1 jalapeno pepper

1 lime

1 Roma (plum) tomato

Directions:

Peel and dice the onion and garlic.

Dice jalapeno pepper, remove seeds and ribs to prevent from being hot**. 

Combine  onion and garlic with diced jalapeno pepper and avocado. Mash to desired consistency using hands.

Add juice of 1 lime and fold in diced tomato. Add salt and pepper, season to taste.

It is great right away or better if you let it sit a bit and allow the flavors to mix.

Makes about 2 cups.

**It is barely spicy, if you want more heat keep the ribs and seeds of the jalapeno.
