Chicken Fried Rice

This is a great simple meal that can be done in 30 minutes.

Chicken Fried Rice


2 cups day old rice (or 1 bag Minute brown rice, cooked per instructions and spread out on a plate to dry a bit.)

1 chicken breast cooked and cubed

1 cup mixed veggies

1-2 tbsp oil

1 egg

1-2 tbsp soy sauce to taste


Cook rice if do not have day old rice. If using frozen veggies cook in microwave 4-5 minutes in bowl of water. While rice and veggies are cooking, cook chicken on pan until cooked through. Remove, and set aside in a small bowl. On pan heat oil, and scramble one egg. Add rice,  veggies, and chicken and cook until slightly crispy. Add soy sauce to taste and mix well. Serve warm.
