Chocolate Chip Biscotti

The second thing we made on friday was biscotti. I tried to make it healthier…  but it ended up being too soft and I needed to add more flour and sugar to be able to get it out of the bowl. They still came out fantastic and next time I would just follow the recipe with a minor tweak of the type of chocolate.

Chocolate Chip Biscotti

1/2 cup unsalted butter ( I used 1/4 cup butter and 1/4 cup apple sauce… that might still work)
3/4 cup sugar (do not try to sub splenda… just leave the sugar alone)
2 eggs
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt
1 3/4 cup flour
1 1/2 cups Mini Chocolate chips ( I preferred 1 block of unsweetened baking chocolate cut up into small pieces)

Preheat oven to 350 degrees Line a baking sheet with parchment.

Cream butter and sugar, add eggs and vanilla. Then mix in flour, baking powder, and salt. When all that is combined stir in chocolate chips.

Take batter and form a log on the baking sheet, about 4-6″ wide. Bake for 20-25 min until the edges are just starting to brown. Then let sit for 10-15 minutes until cool enough to handle. Cut into slices and then put them cut side down on baking sheet and bake for another 10 min. I flipped and baked for anther 5 minutes.


These were still a bit soft on the inside which I liked.They were so yummy and not overly sweet they were gone within a matter of a day.
