Yummy lettuce wraps

These lettuce wraps are so delicious. They almost taste like Wegman’s Shrimp Spring Rolls. These were so good I didn’t get to take a picture. I will try to get one posted soon. I belive this will become a regular meal in our house.

I just made two servings but you can easily make more.

Lettuce Wraps

2 small chicken breasts (Marinated in any Teriyaki marinade and cooked)

6 leaves of lettuce ( I used iceberg but bib or boston lettuce would be easier and more pliable)

2 carrots

1 bunch radishes

1 small zucchini

1/2 cup Newman’s Own low-fat ginger sesame dressing


How to Make Lettuce Wraps:

1. Marinate the chicken breasts for 20 min in about 1 cup of the marinade.

2. Grill the chicken or Saute in oil until cooked through.

3. While chicken is grilling, cut the carrots, zucchini and radishes julienne-style.

4. Separate the leaves of the lettuce; rinse and dry the lettuce.

5. Pour 1/4 cup of Newman’s Own dressing into 2 small containers with

6. When the chicken is done, slice it into strips.

8. Place some chicken and vegetables on a lettuce leaf and add desired amount of dressing or dip into dressing.

Mine made 3 large leafs each.
