Chickpea Patties

This is a great vegetarian option. Everyone in my house likes these even my 22-month-old.

Chickpea Patties

Non stick cooking spray

2 tsp olive oil

1  small onion, chopped

1 small zucchini, grated in large pieces

2 garlic cloves, minced

1/2 tsp ground cumin

1 can (15 oz) chickpeas, drained and rinsed

Salt and pepper

1 cup fresh whole wheat breadcrumbs ( take 2 pieces of bread and blitz in processor to make bread crumbs)

1 egg

  • Preheat oven to 400. Line a baking sheet with parchment paper and spray lightly with cooking spray.
  • Heat a 8-in skillet over medium heat; once hot add the oil. Add onion and cook until soft, about 5 minutes. Add the zucchini, garlic, and cumin, and cook 5-7 minutes longer. Remove from heat and let the mixture cool for 5 minutes.
  • Pulse the chick peas, 1 tsp salt and 1/2 tsp pepper in processor until chickpeas are coarsely ground. Add the bread crumbs, egg, and onion mixture from the skillet and pulse until well combined. 
  • Shape the  mixture into 6 patties (about 1/3 cup mix), and place on baking sheet. Spray each patty with light coating of the nonstick cooking spray. Transfer to oven and bake for 10 minutes, then flip and spray the second side of the cakes. Return to oven and bake. Enjoy!

I like them even the next day toasted on a pan. I don’t even bother with buns, they good on their own.
