Oven-Baked Country Fries

December 3, 2010

I had potatoes I needed to use up before they went bad. I saw this recipe on And sometimes I cook. and since I had most of the ingredients I decided to try them. They were yummy.

Oven Fries

2 egg whites

1/4 cup all-purpose flour

1/3 cup dried bread crumbs

2 T grated Parmesan cheese

1 1/2 tsp onion salt

1 1/2 tsp Italian seasoning   omited did not have any at home

1 tsp paprika

1/4 tsp pepper

3 medium unpeeled baking potatoes (1 lb)

In a shallow bowl, beat egg whites until foamy. In another shallow bowl, combine the flour, bread crumbs, Parmesan cheese and seasonings. Cut each potato lengthwise into 8 wedges. Dip potatoes in egg whites, then coat with crumb mixture. Place in a single layer on a baking sheet coated with nonstick cooking spray. Spray wedges evenly with nonstick cooking spray. ( Don’t forget I did they were a bit dry) Bake, uncovered, at 375 for 40-45 minutes or until golden brown. No need to flip they did not need it.
