Olivye – Russian/Polish Potato Salad

I lived in Poland when I was young and My husband is from Russia. Many foods are similar in both cultures with slight variations. Both of us enjoy olivye which is a version of potato salad. We decided to make some and added leftover turkey.

We made a small batch but you can double or triple the recipe.

Olivye

1 large potato

2 carrots

2 hard-boiled eggs

2-3  dill pickles (I like a good amount)

3 oz turkey breast

1 cup sweet peas

3 tbsp light mayo

Salt and Pepper to taste.

Boil the carrots and potatoes whole. When tender enough to pierce through with fork take out. Carrots will be done sooner. Let cool completely.

Dice carrots, potatoes, eggs, turkey and pickles to equal small pieces @ 1/4 -1/2 inch squares. place in large bowl with peas and mix gently fluffing up veggies. Fold in mayo and season with salt and pepper to taste.
