Rice pudding

Rice Pudding

2 cups cooked brown  rice
1 cup nonfat dry milk
½ cup sugar
¼ teaspoon salt
3 cups water
1 egg, slightly beaten
1 tbsp butter
1 tablespoon vanilla extract

1. In a medium saucepan, combine rice, dry milk, sugar, salt, and water.  Bring to a boil, then cook over medium heat until thick and creamy, about 20-25 minutes, stirring often.

2. Add egg and cook for 3 more minutes, stirring constantly.

3. Remove from heat, stir in butter and vanilla.

4. Pour into serving dish.  Serve warm or cold.

Variations:  add ¼ cup raisins, ¼ cup drained pineapple chunks, or ½ teaspoon cinnamon after you stir in the butter and vanilla

Salsa Chicken

This is the simplest but most delicious dinner. 3 ingredients and 30 minutes.

Salsa Chicken

Chicken -fresh or frozen – as much as you need per person

Salsa – enough to lightly cover chicken

Cheddar cheese -again depends on how much chicken

Directions:

Place chicken in large enough for chicken . Spread salsa on top
Bake in oven at 350 for @30 minutes until chicken cooked completely.
Sprinkle or spread pieces of cheddar cheese on top of chicken and return to oven to melt.

Take out and enjoy. I like it with rice, tortillas, naan or even pasta.

Mini Chicken Pot Pie for 2

Hubby asked for a pot pie so I found a mini pot pie recipe on this site.  I tweaked it to only make 2 and made my own crust.

Mini Chicken Pot Pie for 2

  • 1.5 tablespoons unsalted butter
  • 1/2 small yellow onion, minced
  • 1 small stalk celery, thinly sliced
  • 1 carrots, diced medium
  • 2.5 tablespoons all-purpose flour
  • 1 cups chicken broth
  • 2/3 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cups diced cooked chicken
  • Salt and pepper

Crust ( enough for 2 batches)

  • 1/2 cup flour
  • 1 tsp baking powder
  • 1 tbsp butter
  • dash of salt
  • 2  1/2 tbsp milk

Preheat oven to 375.

 

Make crust:

In a large bowl, combine flour, baking powder, ground sage, salt, cold butter, and milk. Form into a ball, roll out.

Pie filling :

In a large saucepan, melt butter over medium-high.

Add onion, celery, and carrots and cook until onion is translucent, about 4 minutes.

Add flour and cook, stirring, 1 minute until  it doesn’t smell like raw flour.

Very slowly add broth, stirring constantly, then bring to a boil and simmer for 5 minutes.

Add in green beans and chicken and season with salt and pepper.

Making pies:

Divide filling between two 1 cup over safe containers/ramekins.

Top with rolled out crust. Adding  a hole on top for venting.

Bake for 30 minutes until top is golden.

Cool 10 minutes and enjoy.

 

Hubby really enjoyed the pie and so did I. It was a perfect portion and delicious.

Mini Bowtie Pasta with Cherry Tomatoes and Broccoli

This is a recipe I found on the back of a pasta box. I have made it already 4 times. It is simple and easy.

Mini Bowtie Pasta with Cherry Tomatoes and Broccoli

4 servings

1 box mini bowtie pasta – 1lb
2 cups broccoli florets, cut in small pieces
4 tbsp olive oil
1-2 cloves of garlic, diced
2 pints cherry tomatoes
Salt and pepper to taste
Parmesan cheese

Directions

Cook pasta as directed on package.
4 minutes before end of cooking time add in broccoli.
In a large skillet heat olive oil. Add in garlic and saute until slightly yellow.
Add in tomatoes and saute on high heat for 2 minutes until blistered, season with salt and pepper.
Drain pasta, reserving 1/2 cup water.
Toss pasta and broccoli with water and tomatoes with sauce.
Cook until sauce thickens. Top with Parmesan cheese and serve.

Enjoy!

I have made single servings for myself but it’s just as good.

Healthy Zucchini Bread

My in-laws came up this weekend and brought a bag of fresh veggies from their garden. Among the veggies were two huge zucchinis. I decided to make zucchini bread. This is my first attempt at zucchini bread and I really enjoyed it and so did my family.

Healthy Zucchini Bread

3/4 cup lowfat milk
2 large eggs
3/4 cup sugar
1/3 cup applesauce
1 tsp vanilla ( I did not use )
2 cups shredded zucchini
2 cups whole wheat flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/4 cup M&M

Directions:

Preheat oven to 350, spray a loaf pan or 9×9 with cooking spray.

Mix in medium bowl, milk, eggs, sugar, applesauce and vanilla. Stir in zucchini.

In a large bowl mix the dry ingredients except m&m’s. Once mixed add in liquid items and stir. Add in m&m’s.

Pour into prepared pan. Added a couple candies on top.

Bake for 45 minutes to an hour. Until golden brown and wooden skewer comes out clean from center. Let cool in pan for 10 minutes. Then on wire rack for 1 hour  before cutting.

Enjoy!

I have enough zucchini left for another loaf and I plan on trying a chocolate variety.

Gnocci

These can be made into traditional Gnocci or kopitca which in polish means horse hoofs. It is something that just transports me back to my childhood.

Gnocci

The amounts will vary depending on moisture in potatoes.

2 lbs potatoes (starch variety best)
2 cups  flour
1 egg
1/4 tsp salt

Directions:

1.Cook potatoes with skin on until tender.
2. Peel skin off while still warm.
3. Mash well or use a ricer to make sure everything is well mashed.
4. On top of pile of potatoes add 1.5 cups flour. Make a well on top of flour and add in egg.
5. Mix all the items together to form dough. If sticky add more flour.
6. Once dough is smooth @5 minutes. Take a piece off and roll into a log about 3/4 inch thick.
7. Cut log into 1 inch pieces. Straight for Gnocci or on an angle for kopitca.

8. For traditional Gnocci you need to give the pieces ridges with a fork.
9.Once you have a march ready add them to salted boiling water and cook 1 minute after they float.

10. Remove and serve or allow to dry slightly on a plate and refrigerate freeze.

They are great fresh with melted butter, or toast up on pan with butter. These are just fantastic.

Delicious Pizza

I stumbled upon this recipe for pizza dough. It is a no knead version and I just wanted to try it. So I decided to make small personal pizzas for the family. You make the dough the night before and let it rest for @18 hours. It came out incredible!!!

The recipe is simple and there is not even any oil in it. I made a meatball parmesan pizza.

Take 5 oz. of dough. Spread to make a @ 10 inch pizza. Add spaghetti sauce, crumble 1-2 meatballs, and cover with mozzarella cheese.

Bake in a preheated oven per instructions and cook for 10 minutes. And it comes out crisp and incredible!!
